We started off with chocolate chip pancakes for breakfast.
Then I had lunch at the school with my boys.
I thought today would be perfect for a fun after-school snack.
That's when I remembered Cake Batter Rice Crispy Treats (pinned on my Stuff To Eat board).
I first saw these on Gimme Some Oven.
First let me say that we love Rice Crispy treats here.
And we also indulge in licking the batter off the beaters when I've made a cake. It's a dirty little secret - shhh.
So this recipe sounded perfect!
I also thought it would be fun to give them a little fall flair with Halloween sprinkles! See the cute little pumpkins?
Cake Batter Rice Crisp Treats
(from How Sweet Eats)
Ingredients:
3 Tbsp butter
1 (10oz) bag mini marshmallows (can substitute marshmallow creme)
1/4 cup yellow cake mix - dry (I used 1/3 cup)
6 cups crispy rice cereal
1 (1.75 oz) container of sprinkles
Method:
Melt butter in a large saucepan and add marshmallows. Stir until they begin to melt, adding in cake mix one spoonful at a time until combined. Remove from heat. Stir in cereal until it is completely coated with the marshmallow mixture. Sprinkle in half of the sprinkles and mix. Press into a baking dish (any size) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. Spraying a knife with nonstick spray helps to cut them.
These really do have a cake-batter taste to them. I'm glad the kids will be home soon so I won't be tempted to go back and get a
