Pinterest Project - Day 10 {Cowboy Casserole}

Sorry this post isn't on schedule - we had some internet issues over the weekend!
Now that that's all fixed, let's get on with Day 10 of my Pinterest Project!

As a mom, I'm trying to juggle 5 different schedules.
We have sports 7 days a week this fall!
Between homework and practice time, I feel like I am just squeezing dinner in as I can.
I love finding new quick and easy recipes on Pinterest.
Bonus when they are something hearty that my hubby and boys will eat!

When I saw Cowboy Casserole (in my Stuff to Eat board), I knew this would probably be a good fit.
I got this recipe from The Cutting Edge of Ordinary.
Lisa describes Cowboy Casserole as looking like dog food, but tastes delicious.
That's a pretty good description, honestly!

Here is the recipe for Cowboy Casserole from The Cutting Edge Of Ordinary:


Cowboy Casserole
adapted from a recipe at Taste of Home
1 1/2 pounds ground beef
1 medium onion, chopped
3 cloves garlic, chopped
1 can (15.25oz) whole kernel corn, drained
1 can condensed cream of mushroom soup
2 cups cheddar cheese, shredded
1/2 cup milk
4 tablespoons sour cream
1 bag (30 oz) frozen tater tots

In a large skillet cook the onion until tender and translucent. Add the chopped garlic and cook for 1 minute more. Add the beef and cook over medium heat until no longer pink. Drain the mixture and place into a large bowl and set aside.

In a small bowl combine the soup, milk and sour cream. Whisk until smooth. Add to hamburger mixture and stir to combine. Add corn and 1 cup of cheddar cheese. Gently mix to combine.

Grease a 9x13 inch baking dish. Layer half of the Crispy Crowns on the bottom, pour the hamburger mixture over the top and then layer with the other half of the Crispy Crowns. Sprinkle with remaining 1/2 cup cheese and bake at 350 for 25 - 30 minutes, or until golden brown and crunchy.


My review of the recipe:


* I doubled up on everything when I cooked Cowboy Casserole.  I needed to bring a meal to a new mama and figured this would be family-friendly enough.  When I make this again - and I will - I will also double it.  I will freeze the half that we don't eat for another meal.
* My family LOVED this.  I served it with crusty bread and a salad.  The boys ate it - no complaints at all - half the 9x13in pan was gone in no time!  We came back from football practice to find that my hubby had eaten the OTHER HALF of the pan!!!  Guess he liked it.
* The new mom I gave it to said it was a hit there, too.  Her husband was excited to try it and her older daughter really liked it.
